Isn't it fun when you're traveling and you run into someone you know in a random town while traveling?  🙂  Yesterday while traveling to Aaron's parents house we were at a gas station and ran into the Eppers clan!  They were on their way to the Houston area as well!

Ashley and Sean live in Austin and he works at our church with Aaron!  They share a love for pipe smoking.  In fact Sean even has a blog about it!

Anyhow here's the recipe Ashley brought to the cookie party:

White Chocolate-Dipped Cranberry Oatmeal Cookies

1 cup butter
1 cup firmly packed brown sugar
1/2 cup granulated sugar
1 large egg
1 Tbsp vanilla
2 cups all purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 cups sweetened dried cranberries (Craisins)
1 1/2 cup pecan pieces, toasted
1 1/4 cup uncooked quick-cooking oats
3 (4oz) white chocolate bars

Beat butter at medium speed with electric mixer until creamy.  Gradually add sugars, beating well.  Add egg and vanilla, beat until blended.

Combine flour and next 3 ingredients, gradually add to butter mixture, beating until blended.  Stir in cranberries, pecans, and oats.

Drop by heaping tablespoonfuls 2″ apart onto a lightly greased baking sheet.

Bake 375 degrees for 9-11 minutes or until lightly browned.  Cool on baking sheet 2 minutes, transfer to wire rack to cool completely.

Microwave white chocolate in medium microwave bowl on hight for one minute, then stir.  Dip half of each cookie into melted chocolate, letting excess drip back into bowl, then place dipped cookie on wax paper, let stand until firm.
