Meghan brought TRIPLE GINGER COOKIES to the exchange last week and let me tell you they must have been great b/c she WON the YUMMY COOKIE AWARD!!! We had some tastes testers and they voted on her cookie as the yummiest!!!! What an honor!
Triple Ginger Cookies
Yield approx. 2 dozen
¼ tsp salt
1 c. sugar (plus extra for later)
¾ c butter or margarine, softened
¼ c chopped crystallized ginger
¼ c molasses
1 egg
2 1/3 c all purpose flour
1 tbsp grated gingerroot
2 tsp baking soda
1 tsp ground ginger
Heat oven to 375° F. Mix sugar, butter, crystallized ginger, molasses and egg in large bowl. Stir in remaining ingredients except reserved sugar.
Shape dough into 1” balls and roll in extra sugar. Place about 2” apart on ungreased cookie sheet. Flatten slightly with fingertip.
Bake 7-9 minutes or until edges are set. Remove from cookie sheet to wire rack. Cool completely, about 30 mins.
