Every time I have banana's that are on their way to being bad I pull out this recipe. It's perfect and has nothing bad in it, so I don't feel bad at all letting my kids have a few each day. I found this recipe on pintrest and have no link, so whoever created it, I apologize for not giving you proper credit!
It is so easy and you can add whatever you want to it to make it different each time. Basically you mash up 2-3 banana's, add 1.5 cup of oats, and 1 cup of applesauce. I usually add some cinnamon and either craisins or raisins. I have also been known to add chocolate chips to the mix to surprise my kids! In the batch above I used pecans and raisins because that's all I had in the house!
Mix it all up real good and then cook for about 35 minutes in oven at 350.

**UPDATE – someone commented on facebook that she felt as though they didn't turn out. She asked me if they were the consistency of an oatmeal cookie. NOPE. They are not. I should have mentioned that. They are pretty chewy and so maybe they shouldn't be called a “cookie”, but I just do that for my kids to think they are getting a cookie. My kids are also used to eating things like this, so they don't flinch at it. Good luck!

I make breakfast cookies like this for my kids all the time and I completely agree with you—these are so easy and totally guilt free! Even my baby loves them. I’m so glad my kids don’t know what Pop Tarts are and this type of food seems normal to them. 🙂
