A lot of people have asked me how we do slow carb around here and still get carbs in our kids. It seems harder than it really is. Basically I just make meals as I used to, and I don't eat the carbs. I just add lots of extra veggies to my plate and call it a day. One of the best things that we have in our kitchen is a rice maker. If you don't have this, and you eat rice on a regular basis, you should for sure go and get you one right now.
We use our rice maker a few times a week. Another thing that helps is for me to always have lots of veggies on hand. That means that no matter what, we're all getting veggies in each meal and I can get even more since I'm not eating the rice I'm serving them.
Here's what I made the other night for our family and it was carb free for me, and regular meal for everyone else.

I put broccoli on a baking sheet with olive oil and salt and pepper. Yes that's it. Oh so easy. Then put in oven for 30-40 minutes. I also browned some beef with onions and garlic. When it was done I added black beans to the mix.
There it is! Easy meal in a super short amount of time. I then put the kids on a tortilla and added rice to the side and mine was just meat and broccoli. Fabulous meal and everyone was happy!
