Yippee! My mom is flying in tomorrow and I'm so excited. The boys are excited too, but are concerned as to why Pops is not coming too. 🙂 I told them someone has to work to pay the bills! They didn't get it! Deacon even offered his bed, a crib mind you, for Pops to sleep in! Isn't that sweet!

Tomorrow we're picking mom up from the airport and then heading home to soup that will have cooked all day in the crock pot. We're making this tomorrow … we'll let you know how it turns out!

Lentils & Vegetable Stew

3/4 to 1 C dried lentils, depending on how well you like lentils
1 can whole tomatoes, cut up (14 1/2 to 16 oz.)
    1 can vegetable broth (14 1/2 oz.)
1 can whole kernel corn with red and green peppers (11 oz.)
    1 pkg. frozen black-eyed peas (10 oz.)
1 lg. onion, cut into eighths
1 tbsp. chopped fresh basil leaves*
1 tbsp. finely chopped fresh garlic
1/2 c. freshly grated or shaved Parmesan cheese

In crock pot stir together all ingredients except Parmesan cheese. Cook on low for 10 to 12 hours (4 to 6 hours on high) or until lentils are tender.

To serve, ladle into bowls; top with Parmesan cheese.

Yield: 4 servings

*1 teaspoon dried basil leaves can be substituted for 1 tablespoon chopped fresh basil leaves

I know my mom loves lentils so hopefully this will be a hit! I love anything that can cook in a crock pot!

Friday we may be heading to Birmingham for the Student Life tour with the guys. FYI – go to the Student Life page and check out the tour page for a funny video of the guys. 🙂

Sunday we'll go swimming at the indoor pool after church and then head home for chilli, birthday cake and ice cream to celebrate our big FOUR YEAR OLD!

Bush told us about this website tonight and I've already ordered my Jesus>war t shirt. I can't wait for the Jesus>hunger and Jesus>poverty shirts. I'll be adding those to my wardrobe too! Go check out the site and show some love.

I'm still following this site about baby Kyle. I purchased the note cards and a t shirt from them last year to benefit them and love the shirt and the cards are great too.

Just recently started following this family and their journey in the hospital. Powerful story and amazing husband.

Debra pointed me towards this blog this week.  And I LOVE this piece of jewelry.  In fact my 30th birthday is coming up and if Aaron got me this I would freak out and LOVE it.  Please bombard his blog and email with hints about this one!!!!  While you are at it, I would also like a sewing machine from him!!!  Then I could make the clothes for the whole family!!!

Hope your Thursday is fabulous – we're almost to the weekend!  I must now put down the computer and snuggle with the love of my life on the couch as we watch American Idol, drink a glass of wine, and laugh at the poor people singing their hearts out in front of the American public.  Love it!
