Yippee! My mom is flying in tomorrow and I'm so excited. The boys are excited too, but are concerned as to why Pops is not coming too. 🙂 I told them someone has to work to pay the bills! They didn't get it! Deacon even offered his bed, a crib mind you, for Pops to sleep in! Isn't that sweet!
Tomorrow we're picking mom up from the airport and then heading home to soup that will have cooked all day in the crock pot. We're making this tomorrow … we'll let you know how it turns out!
Lentils & Vegetable Stew
3/4 to 1 | C | dried lentils,depending on how well you like lentils |
1 | can | whole tomatoes, cut up (14 1/2 to 16 oz.) |
1 | can | vegetable broth (14 1/2 oz.) |
1 | can | whole kernel corn with red and green peppers (11 oz.) |
1 | pkg. | frozen black-eyed peas (10 oz.) |
1 | lg. | onion, cut into eighths |
1 | tbsp. | chopped fresh basil leaves* |
1 | tbsp. | finely chopped fresh garlic |
1/2 | c. | freshly grated or shaved Parmesan cheese |
In crock pot stir together all ingredients except Parmesan cheese. Cook on low for 10 to 12 hours (4 to 6 hours on high) or until lentils are tender.
To serve, ladle into bowls; top with Parmesan cheese.
Yield: 4 servings
*1 teaspoon dried basil leaves can be substituted for 1 tablespoon chopped fresh basil leaves
I know my mom loves lentils so hopefully this will be a hit! I love anything that can cook in a crock pot!

Sunday we'll go swimming at the indoor pool after church and then head home for chilli, birthday cake and ice cream to celebrate our big FOUR YEAR OLD!

I’m so amazed that even though this family is experiencing hardship, that they still minister to other families as well.

Sounds like life is content for you guys. Love those moments. Love my sewing machine and hope you get one. I’m no expert, but it’s very useful for making clothes for kids, or fixing ones that aren’t that well made from the stores. I’m headed to B’ham this weekend too and seriously contemplated going to the student life concert, but I’m already going to the indigo girls concert and I think the in-laws would be a tad perturbed if I did both when I am supposed to be visiting with them. I already told hubs that the spartanburg date of the tour is a date night for us, so I guess I’ll just have to wait. I follow both you and your hubs blog and would love to actually meet you both. seem a bit like kindred spirits. Having an amazing time.
