I made my kids eat two bites of avocado today. Neither one of them liked it. Cayden's went down fairly smooth. Deacon looked like he was going to throw up. You think if I make them eat a bite every day they'll begin to love them like me?
I had a fabulous salad for lunch. Great green romaine lettuce, a package of tuna, a whole avocado (minus the two bites for each of the boys) and a slice of swiss cheese cut up. Yummy in my tummy!
The boys had a muffin tin lunch. I've seen people do these before and I think it's a fabulous idea. I had two 6 cup muffin tins and put something different in each spot. They loved it and thought it was so cool to eat on a different kind of plate! They had cheese, applesauce, bread, oranges, grapes, blueberries, avocado, edamame and then we topped it all off with cherries. REAL cherries. I had never had these until Aaron brought them home the other day. My kids loved them. By the end of lunch they had red cherry juice everywhere. They are hilarious trying to get the seed out!

the secret with my daughter and avocados was the connecting the dots between the veggie (fruit?) and guacamole.
would she eat a random kinda slimyish green thing? no. but would she eat a green chip dip served in a mexican restaurant? easily.
then we made it at home using one of the powdered spice mixes… she was familiar with it already, so she ate it already knowing she liked it.
then one day she brought me an avocado from the fridge asking me to “get the guacamole out” of it for her.
solid spiceless “guacamole” is less intimidating than a chunk of green stuff with a different texture. she eats them now, but still refers to them as guacamole… if the change in perception works, use it! lol!
I love the muffin tin idea and definitely plan on using it in the next few days. Well as for our lunch, there is no way I am revealing after reading about the healthy lunch your kids had today!

eating at pei wei is not the same when you are a vegetarian. But the tofu Thai dynamite was pretty amazing. Hmmm…wonder what to eat at papasitos tonight? 🙂

We had pbj sandwiches, grapes, pretzels, leftover lasagna, bananas, and cupcakes. The best part was I had lunch with all five of my children!!! 🙂

that sounds just like Cru and cantaloupe! He barely touches it to his tongue and he goes into a coniption. He does like avocado though. I think it depends on the childs tastebuds and when you introduce it. We started early with the avocado and late w/ the cantaloupe..I guess you can consider 1 1/2 late…kids are so mysterious sometimes! The muffin tin sounds so fun! thanks for posting.
avocado is one of the best foods to give kids. My pediatrician asked me to give it to Kiel everyday. He hates it! So I experimented for a week or so by changing the texture and adding other flavors. I mix avocado,mango,banana, and pineapple in a food processor until smooth and freeze it until it is the consistency of ice cream. He loves it! He begs to eat it everyday now.
I love the muffin tin idea! I think I saw it on one of those blogs you mentioned alittle while ago. We make the kids lunch in the morning when I make the older kids their lunch. Then we have a packed lunch no matter WHERE we are! Today, we were at the doctors office and they were ready to eat when we left…lunch in the car and straight to bed when we got home…made the day go much more smoothly
oh, and the avacado: carrots…90 days straight…they eat them now…
first of all aaron i don’t want to hear about your pappasito’s tonight! the only reason i’m not bitter this time is b/c i’ll be 5 minutes from one in about 2 weeks!
tamara- you know the reason deacon eats carrots now is b/c when he wouldn’t you told me to give them to him every day. i ended up throwing lots of carrots away. some whole and some chewed up and spit out. BUT now he eats carrots! i’ll have to keep tryiing!

I had a diet pepsi for lunch lol, you would think someone who works with food would have time to eat. I would love to have some ideas from you on vegetarian meals. I am a meat eater and so far have made vegetable lasagana, a rice tex mex casserole and a artichoke bake. But, I have had many requests for vegetarian meals, and I do not know what to make. Would love some good recipes to fix. Let me know if you have any.
