You guys know I don't like to cook. I LOVE to pin recipes on Pintrest. I LOVE to look at cookbooks with pictures. I LOVE to eat. I LOVE for Aaron to cook.

BUT as far as me cooking …. not my favorite.

So, when weeks go by where I have to feed my children all by myself I am super proud and feel the need to let you know all that I fed them. You might now care, so feel free to move on past this post, but if you happen to need some easy recipes I have some here for you!

 #1 – Zucchini Lasagna & Zucchini Boats

I'm trying to eat slow carb this week, so I made the kids the “lasagna” and made mine plain with no cheese. Y'all my kids LOVE this. I have made the zucchini boats before, but this was my first try at the lasagna. They were hesitant at first, but the entire container was gone after dinner. I found both of these recipes on my friend Ashley Benson's blog. She has great info on the slow-carb diet, and is a fitness instructor, so there's tons of all-things-healthy on her blog.

#2 Ice Cream Pie

Because I was feeling bad about our horrible weekend (sick kids kept us inside all weekend) I made my kids a dessert, and it wasn't the “healthy” kind that I sometimes make for them. It was all out bad, and they LOVED it so much! I made them Frozen Mint Chocolate Chip Pie. It is the easiest thing in the world to make. I have told you before about the Butter Finger pie that I make and how much the love it. This one is almost just like it. 3 ingredients is all you need. That my friends is an easy dessert!

#3 Qunioa “mac” n cheese

I found this on Pintrest – of course. I noticed it because Amos had requested mac n cheese for the week when Aaron was gone, but I wanted something a bit more healthy and wha-la, this is is. It's made out of quinoa, which is so good for you, and I have cooked several other awesome things with quinoa —> here they are.

Try this and your kids will LOVE it – I promise. For real. If you have a gluten free kiddo he will thank you for this!

Cheesy Baked Qunioa

1 c. quinoa
2 c. chicken broth
4 oz. (1/2 block) cream cheese
1 & 1/2 c. grated sharp cheddar cheese
1/2 c. grated parmesan cheese
1-2 t. onion powder
salt & pepper to taste
any seasonings (i.e. italian seasoning, garlic, herbs, etc.), optional

  1. In a saucepan, combine quinoa and chicken broth. Bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until liquid is absorbed.
  2. Stir in the rest of the ingredients, reserving 1 c. of the sharp cheddar. Spread into a baking dish (or 4 individual sized baking dishes).
  3.  Sprinkle with remaining cheddar cheese.
  4.  Bake at 350 F for about 15 minutes, or until cheese is melted and bubbly.

Seriously so wonderful!

**And to clarify all of these are easy, but the healthy part is only in the zucchini and quinoa — there's lots in there that's not healthy too.  😉
