Not sure why, but I wanted to be domestic this morning. Last night I found this recipe online and thought it would be perfect for a Sunday morning breakfast with the WHOLE family!
This is a great recipe b/c I had all the ingredients except for wheat germ. I headed to the grocery store last night in search of something that I had no idea what it was. I searched the aisle with the baking stuff. No luck. By the flour. No luck. By the healthy wheat products. No luck. If you are wondering where wheat germ is it is on the cereal aisle! I realize most of you probably know that, but it was news to me!!!
So, here's the recipe. It was great. Not too sweet and very tasty.
CRUNCHY BANANA MUFFINS
Ingredients:
1 cup mashed ripe bananas (about 2 large or 3 small)
1/2 cup brown sugar
1/3 cup butter or margarine, softened
1 egg
1 teaspoon vanilla
1 1/4 cups flour
1/2 cup wheat germ
1 teaspoon baking powder
1 teaspoon baking soda
1/4 cup milk
1/4 cup granulated sugar
1 teaspoon cinnamon
Directions:
Preheat oven to 350 degrees F.
In mixer bowl add banana, brown sugar and butter. Beat until smooth and light. Beat in egg and vanilla.
Add the flour, wheat germ, baking powder, baking soda, and milk. Mix lightly, just enough to moisten.
Spoon into muffin tins that have been greased or lined with paper muffin cups.
Mix granulated sugar and cinnamon together, and sprinkle over top of muffins.
Bake for 20 minutes.
These sound great, I think I’ll try them soon! However, I was wondering, what makes them cruncy? the cinamon? just curious!
