I made some good cookies this morning!! So yummy! Those cookies that I made last night did not turn out good. They turned out so badly that I didn't even take them to the party. These on the other hand everyone raved about. I was telling the moms at the football game how I want to be a baker, but really I'm just not that good at it. I also mentioned that what I brought I had never made before and I always chose to do that as well. It usually turns out badly for me, but these cookies were a win.
Here's the recipe for them. I advice you head to the grocery store and pick up what you need and make them tonight!
2 cups all purpose flour
1 tsp. baking powder
1/2 tsp. ground cinnamon
1/4 tsp. salt
1 cup softened butter
3/4 cup packed brown sugar
2 eggs
1 tsp vanilla
1 (13oz) package whole grain cereal with cranberries and almonds (such as Post Selects Cranberry Almond Crunch)
1. Preheat oven to 350. In small bowl combine flour, baking powder, cinnamon and salt; set aside.
2. IN a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Beat in brown sugar and granulated sugar until well combined, scraping sides of bowl occasionally. Beat in eggs and vanilla until combined. Gradually beat in flour mixture until well combined. Stir in cereal (dough will be thick and chunky).
3. Drop dough by well-rounded teaspoons onto ungreased cookie sheet. Bake 8 to 10 minutes or until golden. Transfer cookies to wire rack to cool.
Makes about 4 dozen cookies.
Just FYI – it’s 1/4 cup of sugar. I left that off for some reason!
