Today is the BEAKLEY FAMILY CHRISTMAS at our house. We'll have our family, my brother, his wife and their sweet boy Porter and baby Lilly who is still in utero. My parents. My Mimi. My Aunt Donna & Uncle Alan and cousin Casi. Fun times today!
We did this last year and it works out great for all of us to get together the weekend before Christmas! The funny thing about when we have big meals over here is that I'm not slaving in the kitchen, Aaron is. He is the chef of the family and he never lets us down! Today we're having enchiladas, tostadas, mexican rice, beans, corn pudding (i'm making that) and lots of cheesecake and cookies (still from the cookie exchange party!!!). Then we'll have our $10 Christmas exchange, which I hope I get my gift. 🙂

Who cooks when you have all your family over?
This year, we are doing Christmas at my moms and we each get an assignment. The other thing we are doing is teaming up for the week of cooking and doing our own version of Iron Chef. We (each team) will reach into a hat and draw out an ingredient…and each dish will have that ingredient in it in some shape form or fashion. I’m excited about this endeavor. We are all also in charge of one type of cookie apiece and we can ask a child for help in baking them.
So fun, this year we are making it to all 3 family stops. At the first one all family will have flown in late the night before so I am bringing chili and the fixins! Next stop Grandma and mom will not let us down and at Jimmie’s all I am supposed to bring is sweet treats!! My fav and most fun thing to make! We will have chocolate peanut butter rice crispies, fudge, cookies, and peanut clusters.
